  • 48g Eggz

  • 6-8 tablespoons water

  • 2 tablespoons onions, sliced & sautéed

  • 2 tablespoons peppers, sliced & sautéed

  • 1 large mushroom, sliced & sautéed (as per protein allowance)

  • 2 tablespoons vegan / plant-based cheese
  • Whisk together Eggz with water to a ‘batter-like consistency’

  • Pour into a pre-heated, lightly greased, non-stick skillet.

  • Spread out the Eggz batter evenly and cook.

  • When the omelette begins to firm up

  • Flip to cook the other side.

  • Fill half the omelette with the sautéed vegetables and cheese.

  • Fold the other half over top and slide the omelette onto a plate
