6-8 tablespoons water
2 tablespoons onions, sliced & sautéed
2 tablespoons peppers, sliced & sautéed
1 large mushroom, sliced & sautéed (as per protein allowance)
- 2 tablespoons vegan / plant-based cheese
Whisk together Eggz with water to a ‘batter-like consistency’
Pour into a pre-heated, lightly greased, non-stick skillet.
Spread out the Eggz batter evenly and cook.
When the omelette begins to firm up
Flip to cook the other side.
Fill half the omelette with the sautéed vegetables and cheese.
Fold the other half over top and slide the omelette onto a plate
